Note sure if the caterpillar in the attached image is a White Ermine Moth or something else.

Yes, I'm sure you're right - Spilosoma lubricipeda.
The dark dots close to the pale stripe help with diagnosis, being non-central, ie. offset sideways from the mid-line of the segment.
The stripe along the back often shows as a shade of orange (as here), but here's one the same colour as yours
