Modern context
Sorghum is an important staple cereal in the drier parts of Africa and Asia, and occupies fourth place in the world's cereal production. Used as a porridge (thick and thin, fermented or unfermented), sorghum is made into roti or chapatti in India (which can also be made from wheat).
China has a large acreage, as have India and Pakistan. It is still an important crop in drier regions of West Africa, the Sudan and Nigeria, as well as in Iran and the Arabian Peninsula.
hybrid grain sorghum is extensively grown in the USA for forage and for syrup manufacture from a very sweet variety called sorgos. Like maize, sorghum can be used to produce ethanol, used as an oil substitute in vehicle fuel.
Some sorghums are high in
carbohydrates, with a remainder of 10% protein, 3.4% fat and traces of calcium, iron, vitamin B1 and nicotinic acid.
